Skinny Banana Muffins – I can hardly believe these are just one Weight Watchers Smart Point per TWO muffins if you make 8! Avoid the butter and icing sugar, neither of which are really necessary. Take a tip from me though, the raspberries bleed and make them really moist so using bun cases is a no-no if you want to avoid soggy city! The picture below is of blueberry muffins, which I prefer…just substitute the raspberries for blueberries 🙂
Cheesy Bacon Cups – I’ve worked these out to be around 5 weight watchers points each!
Low Carb Breakfast Muffins – I love the recipe in this link, and it’s so simple. My low carb option saw me substituting milk for a little double cream, and adding extra cheese but I guess for anyone following a low fat diet you could make your own sub with skinny milk and maybe half-fat cheese. I’ve tried the recipe with bacon and mushroom, and also tuna. Lovely cold too for lunch on the run – big yum!
Cauliflower fried rice – This works so well, and I worked the whole recipe out at 18 smart points…great value!

This is a brilliant recipe for Cauliflower ‘potato salad’…low in Smart Points as well as low carb, I tried it with Dijon mustard and additional roasted vegetables but it’s one of those recipes you can totally play around with. Thanks Lyn!
